Lavender is one of my favorite aromatic herbs. There are 39 different species and it is part of the mint family (perhaps that’s why lavender and mint compliment each other so flawlessly?). I’m thinking lavender mint chocolate somethingorother (lavender mint flourless chocolate cake?) should be my next baking project.
Simple syrup is so easy to make. 1/2 cup sugar, 1 cup water, boil for a few minutes until the sugar dissolves and voila – your simple syrup ready to go. I infused mine with 1 tbsp of lavender from the stash I dried a few weeks ago. You can infuse simple syrup with almost anything, just be sure to strain it before placing it in a storage jar. I recently made a simple syrup with white peaches… that was delicious. Simple syrups are a perfect refresher for sparkling water (add 1 tbsp for about every cup) and can also be used in cocktails, which is exactly what I did!
1 tbsp lavender simple syrup
2 oz vodka
6 oz sparkling water
Pour over ice and enjoy, or if you want to be extra classy, shake it up in a martini shaker with a bit of ice, pour into a martini glass, and drink it in style.
